Mocktail of the month (June)

With summer upon us, I definitely wanted to mix up a drink that was oh-so-refreshing, and for some reason, lemonade sounded good. But I didn’t want just plain lemonade. I wanted a fruity little twist, and decided on strawberries simply because we had a TON of them in our fridge.

What was created has been requested by our little people everyday since! It’s super easy to make, and I believe the hidden-gem ingredient is the coconut sugar.

Sure hope you enjoy it as much as we all do!

Strawberry Lemonade

Strawberry Lemonade

(Makes 4 servings)

Ingredients:

12 large strawberries

2 Tbsp coconut sugar

3/4 cup freeze squeezed lemon juice

2 cups chilled water

4 Tbsp coconut sugar

Directions:ย 

  1. Blend the strawberries + 2 Tbsp of coconut sugar until it mix is liquified.
  2. In a pitcher, combine the lemon juice, strawberry juice, water, and remaining coconut sugar.
  3. Stir up the goodness.
  4. Garnish cups with coconut sugar rim + strawberry.
  5. Add ice.
  6. Pour in the goodness.
  7. ENJOY!!
